Recipe - Snack - Low carb Hummus (bean free)

Sometimes you just want to jazz up a snack with some dip - or offer something to guests that you can enjoy guilt free.  Try this great recipe we love.  


A great snack with raw vegies, spread on a steak or with a Low Carb Falafel!

                                                                                                  

Ingredients:    

4 cups peeled & chopped raw zucchini
3/4 cups tahini (sesame paste)
1/2 cup fresh lemon juice
1/4 cup olive oil
4 cloves of garlic, peeled
2 teaspoons kosher salt (or to taste)
1 Tbl ground cumin
 

Method:
  • Combine all ingredients in a blender and puree until thick and smooth.  Taste and adjust seasonings to your preference.  
  • Pour into a shallow serving bowl and garnish with parsley, paprika and a drizzle of olive oil if desired. 

Approximately 2.5 g net carbs per 2 Tablespoon serving
